Homemade Lemonade

Ingredients

1 cup sugar
1 cup water
1/4 cup finely grated lemon rind
1 cup lemon juice
1 1/2 litres water, extra

 Makes about 2 litres.

Method

  1.  Put the sugar and 1 cup of water in a small heavy based pan and stir them over a medium heat without boiling until the sugar has dissolved. Brush the suhar crystals down the side of the pan with a wet pastry brush.
  2. Bring the mixture to the boil and reduce the heat slightly and boil for 1 minute. Take the pan off heatand leave to cool.
  3. Mix the lemon rind and lemon juice and extra water in alarge jug and cooled sugar mixture. Leave to stand for 2 hours.
  4. Strain the lemonade and refridgerate if. Dilute it by adding water, to taste.
