Chicken soup

Ingredients

  • 1 chicken, cut into pieces
  • 2 onions, sliced
  • 5 cardamom pods
  • 1 cinnamon stick
  • 5 cloves of garlic, cut in half
  • 1 cube of chicken stock
  • Whole black peppercorns
  • Salt
  • Water to cover the chicken
  • 1 lime

Method

  1. Fry the chicken and onions until slightly brown.
  2. Put all ingredients except the lime in a large pot.
  3. Bring to the boil, then simmer for 20 minutes.
  4. Strain the soup and serve as a broth with a squeeze of lime juice.
  5. You can fry the leftover chicken pieces and serve them separately.

Gazpacho

Ingredients

1-2 bottles of V8 vegetable juice 1 clove of garlic crushed
1 onion very finely chopped
1 green capsicum, cut into fine cubes
1 Lebanese cucumber, peeled and diced into small cubes
2 tomatoes, cut into small cubes
1 carrot, peeled and grated
Juice of 1 lemon or lime (or more, if your like the taste)
some fresh chopped parsley, fresh mint, oregano, thyme, coriander
extra salt and pepper, one fresh chilli if you like it hot.

Method

  1. Mix 1 bottle of V8 juice and all the ingredients together, put into the fridge for at least 2 hours, then serve. If your soup seems too thick, add more V8 juice. It depends of the size of the vegetables you are using.
  2. In Spain, there was a different Gazpacho in every village - some were very thin, with only a few vegetables in them, others where quite thick. Some had heaps of garlic in them, others not.
