Mrs Beetons Baked Sponge Pudding (Video)
From The Best of Mrs Beeton’s Puddings and Desserts
Ingredients
50g Cocoa
butter for greasing
100g butter
100g caster sugar
2 eggs,beaten
100g plain flour
1 tsp baking powder
1\4 vanilla essence
2 tbsp milk
Method
- Grease a 1 litre pie dish.
- Set oven to 180 celsius or 350 fahrenheit.
- In a mixing bowl cream butter with sugar until light and fluffy.
- Gradually beat in the eggs.
- Sift the flour, cocoa and baking powder together into a bowl,then fold them into the creamed mixture.
- Add the essence and enough milk to form a dropping consistency.
- Spoon the mixture into prepared pie dish and bake 30-35 minutes until well risen and golden brown.
- Serve with chocolate sauce
Chocolate Cream Sauce
Ingredients
75g plain chocolate, roughly grated
1 tbsp butter
1 tbsp single cream
1 tsp vanilla essence
Method
- Put the grated chocolate in a heatproof bowl with butter.
- Add 4 tbsp water.
- Stand the bowl over a saucepan of simmering water and stir until the chocolate and butter have melted.
- When the chocolate mixture is smooth, remove from heat immediately stir in the cream and vanilla essence.
- Serve at once.
