Mrs Beetons Baked Sponge Pudding (Video)

Ingredients

50g Cocoa

butter for greasing

100g butter

100g caster sugar

2 eggs,beaten

100g plain flour

1 tsp baking powder

1\4 vanilla essence

2 tbsp milk

Method

  1. Grease a 1 litre pie dish.
  2. Set oven to 180 celsius or 350 fahrenheit.
  3. In a mixing bowl cream butter with sugar until light and fluffy.
  4. Gradually beat in the eggs.
  5. Sift the flour, cocoa and baking powder together into a bowl,then fold them into the creamed mixture.
  6. Add the essence and enough milk to form a dropping consistency.
  7. Spoon the mixture into prepared pie dish and bake 30-35 minutes until well risen and golden brown.
  8. Serve with chocolate sauce

Chocolate Cream Sauce

Ingredients

75g plain chocolate, roughly grated

1 tbsp butter

1 tbsp single cream

1 tsp vanilla essence

Method

  1. Put the grated chocolate in a heatproof bowl with butter.
  2. Add 4 tbsp water.
  3. Stand the bowl over a saucepan of simmering water and stir until the chocolate and butter have melted.
  4. When the chocolate mixture is smooth, remove from heat immediately stir in the cream and vanilla essence.
  5. Serve at once.
